- Salt and black pepper to taste
- 3 cups diced vegetables such as mushroom, olives, capsicum and bell peppers
- 1/2 cup diced onion
- 2 minced garlic cloves
- 1 teaspoon Italian oregano seasoning
- 1 tablespoon fresh parsley
- 400 grams diced tomatoes
- 3 cup vegetable broth
- 1 cup heavy cream
- 350 gram penne pasta
- 2/3 cup mozzarella cheese
- 1/2 cup parmesan cheese
