This easy, delishpasta with butter and parmesan is a take on the classic Italian dish Cacio e Pepe. The fettuccine is sprinkled with parmesan and topped with a peppery butter sauce. It makes for a great dinner with family and friends, and it all takes under 20 minutes.
Preparation
Ingredients:
- Pasta noodles
- Butter
- Pepper
- Parmesan cheese
Method:
- Boil salted water and cook the pasta al dente in a large pot. Drain the pasta and set it aside, while reserving at least one cup of the pasta water. The water will help thicken and bind the butter sauce at the end.
- Melt the butter over medium flame in the same pot. Add the pepper and for about one minute stir it frequently. Take the pot off the flame and gradually add the cheese. As you add the cheese, whisk it continuously. Don’t fret if it does not dissolve completely. Make sure to not add the cheese all at once as it will end up a clumpy mess.
- Then add the pasta noodles and toss it in the butter sauce. Add the reserved water to “loosen” the sauce to help coat the pasta more uniformly.
- Your dish is ready to eat!
- You can serve it with some toasted garlic bread to make it a full meal.
Pro Tips
Recommended Video
- Use fettuccine or whatever pasta you have on hand. Long pasta noodles help stick to the sauce better.
- Grated parmesan cheese is better than shredded cheese as it will form a perfect texture for the pasta with butter.
- Use less pepper if you are making it for kids. You can add more pepper to the adult’s bowls at the end.
