This summer season we get watermelons galore. But most of us have it as a fruit or a juice only. How about trying out different recipes where you can also utilise the skin of the watermelon and making something really tasty out of it? From salad to a soup to halwa and sabji, here are some really easy and quick recipes to utilise the fruit in different ways.
Watermelon Feta Salad
Ingredients
- 1/4 cup extra-virgin olive oil
- 1/2 tsp salt
- 2 cups cubed seedless watermelon
- 1 cup chopped into medium size pieces cucumber
- 1 cup crumbled feta cheese
- 1/2 cup sliced red onion
- 1/2 cup chopped mint
Method
In a small bowl, mix in olive oil and salt.
Take a serving bowl, and add the cucumber, watermelon, cheese, red onion, and mint.
Pour over the olive oil dressing and toss it all together.
Garnish with more mint.
Chilli Watermelon Soup
Ingredients
- Half of a medium-size watermelon
- ½ cup plain curd
- 1 tsp grated ginger
- Juice from ½ lemon
- Pinch of sea salt
- Pinch Of nutmeg powder
- 5-6 chopped mint leaves
Garnishing
- Spoon of plain curd
- Crushed walnuts
- Mint leaves
- Drizzle of honey
Method
Blend all the ingredients in a blender and keep it in the fridge overnight.
Garnish as desired and serve.
Watermelon Sabji
Ingredients
- 4 cups watermelon rind and remove the tough green skin, cut into ½ inch pieces
- 2 tbsp ghee
- ½ tsp cumin seeds
- 5 minced cloves garlic
- 1 inch minced ginger
- ½ minced capsicum without seeds
- 1/2 tsp red chilli
- 1 tsp coriander powder
- ½ tsp amchur
- ¼ tsp haldi
- ½ tsp sea salt
- ¼ cup water
- ¼ tsp garam masala
Method
Melt the ghee in a pan on medium heat and then add the cumin seeds.
Once the seeds splutter, add the garlic, ginger and capsicum.
After a minute, add the red chilli, coriander powder, amchur, turmeric, and salt.

Add the watermelon rind and water. Mix well.
Cover and cook for 12 minutes and stir in between.
Once the rind becomes soft and most of the water gets absorbed, remove the lid and add the garam masala.
Mix well and cook for a few more minutes.
Remove from heat and serve.
Watermelon Halwa By Chef Kunal Kapur
Ingredients
- 3 large wedges watermelon rind
- 2 tbsp ghee
- 1tbsp suji
- 1 tbsp besan
- ½ cup sugar
- ½tsp cardamom powdered
- Pinch of nutmeg powder
- 1 cup milk
Method
Peel the outer thick green layer of the watermelon and again peel another layer.
Roughly chop the rind and grind to make a paste without water.
Heat a pan and melt ghee.
Add besan, suji, and cook on low flame till they brown.
Add the melon rind puree and cook to make it thick.
Add sugar and cook again for 10 mins.
Add milk, cardamom powder and nutmeg powder.
Cook for another 5 minutes and then remove from heat
