Winter meals feel incomplete without flavourful pickles. A side of pickle always amps up the taste of our daily meals. A lot of people across the country prepare pickles at the onset of summer, let them age through the months, and then relish them during the chilly season. However, if you are someone who couldn't do that or always relies on quick, instant recipes, we have some easy pickle recipes for you.
Green Chilli Instant Pickle
If you love adding a dash of heat to your meals, make this green chilli pickle.
Ingredients
- 1 Cup Green Chillies
- 1 Tbsp Fennel Seeds
- 2 Tsp Cumin Seeds
- 2 Tsp Fenugreek Seeds
- 1 Tsp Mustard Seeds
- 1/4 Tsp Asafoetida
- 1/4 Cup Mustard Oil
- 1 1/2 Tbsp Vinegar
- Salt To Taste
Directions
- Dry roast fennel seeds, fenugreek seeds, cumin seeds, and mustard seeds and take off the flame.
- Let the mix cool and then blend to get a coarse mixture.
- Split green chillies into two halves.
- In a deep bowl, add the chillies, spice mix, and all the other ingredients. Mix well.
- Transfer to an air-tight container. Refrigerate.
Onion Instant Pickle
This onion pickle will add a tasty crunch to your meals.
Ingredients
- 1 Onion
- 1/4 Cup Oil
- 1 Tbsp Red Chilli Powder
- 1/4 Tsp Turmeric Powder
- 1 Tsp Mustard Seeds
- Lemon Juice To Taste
- Salt To Taste
Directions
- Dice onions and keep aside.
- In a bowl, add all the spices and squeeze lemon juice.
- Add in the diced onion. Mix well.
- Lastly, add the oil.
- Store the pickle in an air-tight container.
Carrot Instant Pickle
There is no better way of adding carrots to your everyday food. Relish this delicious pickle with your daily meals.
Ingredients
- 3 Carrots
- Oil As Required
- 2 Inches Ginger
- 3/4 Tsp Mustard Seeds
- 1/4 Tsp Hing Or Asafoetida
- Handful Of Curry Leaves
- 1-2 Tsp Chilli Powder
- 1 Tsp Mustard Seeds
- 1/4 Tsp Turmeric Powder
- 1 Tsp White Vinegar
- Salt To Taste
- 2 Tsp Lemon Juice
Directions
- In a pan, add some oil and add sliced ginger.
- Chop the carrot into thin slices and saute. Take off the flame.
- Pour some oil into the pan again and add all the spices - mustard seeds, asafoetida, turmeric powder, chilli powder, and curry leaves.
- Give all the ingredients a good mix.
- Add in fried carrots and ginger.
- Next, squeeze in lemon juice.
- Mix well and your instant carrot pickle is ready.
Ginger Instant Pickle

- 100 Grams Ginger
- 4 Green Chillies
- 2 Lemons
- Salt To Taste
- 1 Tbsp White Vinegar
