In our day to day, busy lifestyle we often tend to ignore some basic nutrients that should be present in our daily diet. Especially when it comes to veggies and consuming them raw in the form of salads, there are very few of us who actually ensure that the practice is maintained. So, how about finding a new way of whipping all the veggies together in the form of a soup? And no, it is not a traditional hot soup, it is chilled, and you can eat it with any kind of bread. Spanish Gazpacho soup is a perfect one-time recipe which contains a number of fresh veggies and is easy to whip. All you need to do is, put fresh ingredients in a blender with some ice and you are sorted.

Gazpacho traces it’s origin to the Andalusia region of Spain. It gained popularity when the country was under the Islamic regime. Preferred by the ones who were of limited economic means, it was initially consumed as a liquid salad. It was made in a mortar and served with bread, but over the years a variety of versions of the cold soup have gained popularity. So just in case you want to try it too, here is the recipe

Ingredients

  • 1 cucumber
  • 1 red pepper
  • 1 green pepper
  • 1 full onion
  • 1kg tomatoes
  • 2 garlic cloves
  • 1 small piece of ginger
  • 2 tablespoons of olive oil
  • 2 tablespoon of sherry vinegar
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 80 grams of bread

Method
  • Peel cucumbers and cut into small chunks
  • Boil tomatoes, peel and crush them
  • Similarly boil those peppers, peel and crush them
  • Cut onions into small chunks
  • Mix all these ingredients into a small bowl and add bread
  • Dribble 2 tablespoons of sherry vinegar
  • Freeze the mixture for half an hour
  • Transfer the entire mixture into a blender and blend, add olive oil from the top
  • Because it’s summer you can throw in some ice cubes to keep it chilled
  • Add salt and pepper
  • Blend it, till you get a smooth yet thick mixture, ensure there are no chunks left
  • Serve your cold soup with toasted bread or crisps
