Onion Tomato Uttapam

Ingredients:
- 4 cups readymade dosa batter
- 1/2 cup finely chopped green chillies
- 1 1/2 cups finely chopped coriander
- 3 cups finely chopped onions
- 3 cups finely chopped tomatoes
- 3 tsp finely chopped curry leaves
- 3 tsp grated ginger
- Salt to taste
- Oil for cooking
Recipe:
- Take dosa batter with a little water and salt in a bowl and mix well.
- Heat a non-stick tawa, sprinkle a little water on it and wipe off using a piece of cloth.
- Pour one tablespoon of the batter on the tawa, spread in a circular motion and cook on a medium flame for 45 seconds.
- Press it lightly using a flat ladle then pour a little oil on it and over the edges. Cook on a medium flame for 2 minutes or till it turns light brown. Flip the Uttapam and repeat.
- Serve hot with sambar and coconut chutney.
Mysore Masala Uttapam

Ingredients:
- 4 cups ready-made dosa batter
- 4 tbsps chopped green capsicum
- 6 tsp red chilli-garlic chutney
- 8 tbsps chopped onion
- 8 tbsps chopped tomato
- 2 tsp red chilli powder
- 1 tsp chaat masala
- 4 tsp chopped fresh coriander leaves
- 1 small carrot
- ½ small beetroot
- Ready-made potato bhaji
- 4 tsp butter
- Salt to taste
- 4 tsp ghee
- 6 tbsps coconut chutney
Recipe:
- Add dosa batter, and salt in a bowl and mix well.
- Heat 1 teaspoon ghee in a non-stick tawa. Pour one tablespoon of batter and gently spread in a circular motion.
- Spread a portion of the potato bhaji, sprinkle 2 tbsp onion, 2 tbsp tomato, and 1 tbsp capsicum. Now add 1½ tsps red chilli garlic chutney, and 1½ tbsps coconut chutney.
- Sprinkle ¼ tsp chaat masala and 1 tsp coriander leaves. Mix and mash this mixture.
- Grate ¼ carrot and a little beetroot on it and gently mix.
- Add 1 tsp butter and cook for 2-3 minutes on low heat. Flip and cook till the other side is completely cooked.
- Take it off the pan, garnish with coriander leaves and serve hot with coconut chutney and sambar.
Paneer Uttapam

Ingredients:
- Cut ½ inch cubes of 100 grams of paneer
- 2 cups of readymade dosa batter
- 1 small chopped onion
- 1 small finely chopped tomato
- 8-10 shredded curry leaves
- 2 tbsps chopped fresh coriander leaves
- 1 small chopped green capsicum
- 2-3 chopped green chillies
- 1 tsp coriander powder
- 1 tsp Chilli Powder
- 1½ tbsps sambar powder
- 2 tsp coconut oil
- Salt to taste
Method:
- Take a bowl and add all the ingredients including onion, tomatoes, curry leaves, coriander leaves, green capsicum, green chillies, coriander powder, chilli powder, sambar powder, coconut oil, salt and paneer and mix them well.
- Heat oil on a tawa and spread the dosa batter in a circular motion.
- Spread the paneer mixture on top, drizzle some oil on the sides, cover and cook for 2-3 minutes or until the base turns golden brown.
- Carefully flip the paneer uttapam and cook for 1 minute more.
- Take off the pan, garnish with coriander leaves and serve with coconut chutney.
