Method:
Step 1: Wash all the mushrooms thoroughly and dry them completely. Cut them into thick pieces.
Step 2: On a medium flame, heat a pan or wok and add oil in it. Once it starts to smoke, add in the pieces of mushrooms and mix them well in the oil so that it coats all the mushrooms entirely. Put the flame to high and toss the mushrooms till they are crisply cooked. Make sure to not burn the mushrooms.
Step 3: Add in the sliced onions, sliced red chillies and chopped garlic, and toss them in. After this, reduce the heat.
Step 4: Pour in the Chinese cooking wine or white wine to deglaze the mushrooms.
Step 5: Add sambal oelek, dark soy sauce and chilli bean sauce in the pan and stir-fry it on high heat. Season it with salt and scallions as per taste.
Step 6: Your dish is ready to serve!
