First, rinse the fish, squid and prawns in cold water and then, pat dry them with paper towels separately. Cut the fish and squid into medium chunks. Pat dry the onions and put them all in the food processor to grind them finely. Then, transfer the ground mixture into a large mixing bowl. Add egg white, rice wine, sugar, salt, starch and flour to the bowl and mix them well together. Make small fish cakes from the mixture in whatever shape you desire like fish cake balls or fish cake long thin bars and lay them down on baking paper.
Boil water on high heat for five minutes and add some fish cakes to the boiling water using tongs. Cook them for about two to three minutes until the fish cake become firm. Set them aside in a strainer to cool down. Prepare your soup and put the cooked fish cakes in it as you serve them together.
