Banana pancakes are easy to make and can be made in a few minutes for a delicious breakfast.
Add all-purpose flour, sugar, baking powder, cinnamon and salt in a medium bowl. Whisk them together and set aside.
In a separate bowl, mash the bananas with a fork. Add eggs, milk and canola oil. Mix well.
Mix together the ingredients in the two bowls. Let it sit for a few minutes.
Heat a large pan. For each pancake, spoon about 1/4 cup of the batter onto the pan. Cook until bubbles form over the surface of the pancakes, then flip with a thin spatula, and cook for 1 or 2 additional minutes.
Serve warm with maple syrup drizzled on top and with the toppings of your choice.
