Gujiya

Ingredients
- 3 Cups All Purpose Flour
- 300 Gram Khoya
- 1 Tbsp. Cardamom Powder
- 1 ½ Cup Sugar
- ¼ Cup Semolina
- 2 Tbsp Finely Chopped Almonds
- 1 ½ Cup Ghee
- 1 ½ Cup Water
Method
- Take a large mixing bowl. Add all purpose flour and water to make a dough. Also, some ghee to the dough. Knead it well.
- Once you get the desired consistency, leave it aside for a while.
- Meanwhile, add khoya and semolina to a pan. Sauté it until it turns golden brown.
- Once it is cooked, let it cool down.
- Add sugar, cardamom powder and almonds to the khoya mixture once it is cooled down. You can add other nuts as well.
- Now, grease your hands with oil or ghee.
- Then, make small balls of the dough. Roll it out and put the stuffing in the centre. Cover it and seal the corners using your hands.
- Heat some ghee in a pan over medium flame. Fry the gujiyas until they are golden brown.
- Your gujiyas are now ready to be served. Just garnish with some saffron strands and nuts.

Shakarpara

Ingredients
- ¼ Cup Powdered Sugar
- ¼ Cup Water
- 1 Cup All Purpose Flour
- 1 Tsp Semolina
- ¼ Tsp Cardamom Powder
- 2 Tbsp Ghee
- ½ Tsp Salt
- Oil
Method
- Take a large mixing bowl. Add sugar and water. Mix well.
- In another bowl, add all purpose flour, semolina, cardamom powder, salt and ghee. Add sugar syrup little by little and knead the dough.
- Roll it like a paratha. Don’t make it too thin.
- Cut the dough into diamond shapes.
- Deep fry in hot oil. Fry them until golden brown and keep stirring occasionally.
- Take them out on a kitchen towel to drain out the excess oil.
- You can bake it at 180 degrees Celsius for about 15-20 minutes.
- Your shakarparas are now ready to be served.
