As soon as the rice finishes cooking, spread it out on a baking tray or shallow dish to help it cool fast. Leaving it in the pot or at room temperature for too long allows bacteria to multiply. Once it’s no longer steaming, ideally within an hour, transfer to the fridge.
Shannon Stover, MS, RD, food safety educator at Michigan State University Extension, says, “After [properly cooling], cooked rice should be stored in a tightly sealed food-grade container.” Remove excess air, seal tightly, and keep it in the fridge. Stored this way, and rice will stay safe overnight, and you can have it the next day.
When you cook rice or dishes containing rice, make sure they are heated to a safe temperature in several places before serving. If you cook rice to serve later, or to use in another dish (for example, biriyani), make sure the rice has been properly chilled and stored before you use it, states the Food Standards Agency (FSA). To avoid dry, clumpy reheated rice:
i) Microwave: Sprinkle a little water, cover with a damp paper towel, and heat until piping hot throughout.
ii) Stovetop: Gently warm with a splash of water, covered, until steaming.
iii) Rice cooker or steamer: Use a reheat setting if available, and add moisture as needed. Make sure to reheat on a medium flame/ temperature.

After cooling, portion it out into single-serving containers. Add a touch of oil when storing to prevent clumping. Always sprinkle water before reheating to restore fluffiness.

i) Leaving Rice Out All Night: This can lead to toxins, even if the rice looks fine.
ii) Storing In Deep Containers: Large clumps cool slowly and raise contamination risk.
iii) Repeated Reheating: Each heating cycle increases bacterial risk, and only reheats once.
With these simple, everyday tips, your rice leftovers will be just as good as when freshly cooked.
