One such ingredient that is commonly used is Kuttu atta or buckwheat flour. It's gluten-free, nutrient-rich, and perfect for fasting days. Kuttu ka atta is a popular ingredient during Navratri fasting as it is packed with nutrition and is considered to be sattvic. It is rich in fibre, and essential minerals like magnesium, and is gluten-free, making it a healthier option for those who observe fasts. The combination of Kuttu atta, jaggery, and ghee makes it a fulfilling option. This easy Kuttu ka Halwa recipe is by Chef Anahita Dhondy. Here’s how to make Kuttu Ka Halwa at home:

How To Make Kuttu Ka Halwa

Kuttu Ka Halwa

1. In a heavy-bottomed pan or kadai, heat 3 tablespoons of ghee on a medium flame. Add 6 tablespoons of kuttu atta (buckwheat flour) to the melted ghee and start roasting. Stir continuously to avoid burning and roast the flour until it turns golden brown and emits a nutty aroma.

2. Now take another small pan and boil four cups of water. Once the water is boiling, add ¾ cup of jaggery and the crushed cardamom pods. Now stir the mixture until the jaggery dissolves completely. Once dissolved, turn off the heat and let the jaggery water cool down.

3. Once the atta is well roasted, reduce the flame to low. Gradually add the prepared jaggery water to the atta while continuously mixing the mixture to avoid lumps.

4. Then continue cooking the halwa on a medium-low flame for 5-7 minutes, stirring occasionally, until it reaches your desired consistency. The halwa should be smooth and thick. If needed, you can add more ghee to enhance the flavour and texture.

5. Once the halwa is ready, turn off the heat. Garnish it with chopped nuts like cashews, almonds, or pistachios, and serve warm.

Ingredients

  • 3 tablespoons ghee
  • 6 tablespoons Kuttu atta
  • 3/4 jaggery (gur)
  • 2-3 crushed elaichi
  • 4-5 cups water
  • 1 tablespoon mixed nuts (cashews
  • almonds
  • pistachios)

Step

  • Step 1 :

    First heat some ghee in a medium-sized kadai, add 6 tablespoons of kuttu atta, and roast on medium flame until golden brown.

  • Step 2 :

    Now in another pan, boil 4 cups of water, and add jaggery, and crushed cardamoms. Stir until the jaggery dissolves and turn it off. Once down, set it aside.

  • Step 3 :

    Now lower the flame, and gradually pour the jaggery water into the roasted atta while whisking to avoid any lumps.

  • Step 4 :

    Then let it cook on low heat for 5-7 minutes until the halwa thickens. Add more ghee if you want.

    Once cooked properly, garnish with chopped nuts and serve warm.
