1. First prepare the dry ingredients. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon until well combined. This ensures that the dry ingredients are evenly distributed throughout the batter, resulting in evenly spiced pancakes.
2. Then combine the wet ingredients. For this take a separate bowl, and whisk together the milk, egg, melted butter, and vanilla extract until smooth and well incorporated.
3. Pour the wet ingredients into the bowl of dry ingredients, and gently fold them together using a spatula or wooden spoon. Be careful not to overmix the batter, as this can lead to tough pancakes. A few lumps in the batter are perfectly fine and will result in lighter, fluffier pancakes.
