Dragon Fruit Chia Pudding

Ingredients:

  • 1/2 Pink dragon fruit
  • 40 g Mixed chia seeds
  • 1 cup Milk
  • 1 Banana
  • 1/2 cup Yoghurt
  • Pomegranate seeds (for garnishing)

Recipe:

  1. Add mashed banana and chia seeds to milk. Let them soak for 2 hours.
  2. You’ll get a slimmy consistency once it is completely soaked. Divide the content into three bowls of equal quantity.
  3. Add pink dragon fruit in each bowl to create the ombre colour. You can also have yoghurt as a base.

Dragon Fruit Ice Cream

Ingredients:

  • 1/2 cup dragon fruit puree
  • 250 ml full fat milk
  • 1/4 cup sugar
  • 1/4 cup milk powder
  • 1 tbsp Corn flour
  • 1 tbsp GMS powder

Recipe:

  1. To prepare the base, start by boiling milk. Then, mix cornflour and Gms powder with 1/4 cup of milk and add it to the boiling milk, followed by sugar. Stir well and cook on low heat for 7-8 minutes. Once done, let the mixture cool to room temperature. Pour it into an airtight container and freeze for 10-12 hours, after which the base will be ready.
  2. Next, blend chopped dragon fruit into a puree. Then, heat it in a pan with 1 teaspoon of sugar over low heat for 3-4 minutes. Let the puree cool once it's ready.
  3. Now, combine the base with milk powder in a large vessel and blend well. Add the dragon fruit puree and churn for 7-8 minutes. Transfer the mixture to airtight containers and freeze for 12-15 hours. Serve chilled.

Dragon Fruit Cake

Ingredients:

  • 1 dragon fruit
  • 1 and half cup maida
  • 1/2 tsp soda
  • 1 tsp baking powder
  • 1/3 cup sugar
  • 1/2 buttermilk
  • 1/4 cup oil
  • 1 pinch salt

Recipe:

  1. Add dragon fruit and sugar to the blender and make juice.
  2. Next, blend oil and buttermilk together in a grinder. Meanwhile, sift together the maida, baking soda, and baking powder.
  3. Grease a vessel with oil and dust it with maida. Pour in the batter and tap gently to remove air bubbles. Bake the cake for 40 minutes.
  4. Let the cake cool then remove it from the vessel. Garnish with dragon fruit chunks and enjoy.
