Cooking is not only about putting the right ingredients in place but choosing the right utensil is equally important. Most people choose utensils based on their aesthetic preferences. However, the type of cooking material you choose significantly impacts the food quality and taste. Amidst several options, there’s a constant debate about choosing between stainless steel and aluminium. Scroll down to learn the difference to make a wise decision.
Aluminium cookware is one of the cheapest utensils available in the market. They are versatile and are compatible with most cooking methods. According to research published in Researchgate, the pathological effects of aluminium on the human body, due to its leaching from utensils with long-term use has been associated with certain clinical conditions such as anaemia, dementia and osteo-malacia.
There are some studies that suggest cooking in utensils or aluminium foils is safe, others suggest that it may lead to toxic levels of aluminium in the body. However, studies have shown that the leaching of aluminium from cooking utensils depends on many factors such as pH, temperature and cooking medium.
According to the National Library of Medicine, stainless steel is greatly used in preparing food. However, researchers suggest that stainless is readily attacked by organic acids, particularly at cooking temperatures; hence iron, chromium, and nickel should be released from the material into the food. Nickel is implicated in numerous health problems, notably allergic contact dermatitis. Conversely, chromium and iron are essential nutrients for which stainless could be a useful source.
