This dish is prepared using wheat flour, capsicum, mashed potato, tomato, onion, green chutney and a melange of spices.
To prepare this scrumptious dish, start by assembling all the ingredients and knead a soft, pliable dough. Cover this dough with a damp cloth and keep it aside.
Meanwhile, boil potatoes in a pressure cooker and then peel and mash them using a masher.
Now, wash onion, tomatoes, and capsicum in running water and chop them in separate bowls.
Heat oil in a pan over medium flame. Once it is hot enough, saute cumin powder, mustard seeds along with asafoetida and salt.
After a few seconds, add chopped onions and saute them until they turn golden. Once they are done, add garlic paste along with chopped tomatoes and capsicum. Let it cook for a few minutes, then add mashed potatoes along with all spices. Let the veggies cook for 4-5 minutes on medium flame.
Meanwhile, unwrap the dough and divide it into 3-4 equal parts and flatten them with your hands.
Using a rolling pin, roll these balls into the shape of a chapati.
Heat tawa on medium flame. When it is hot enough, transfer the rolled out roti onto the hot tawa and cook until both sides are golden brown. Repeat the process with the rest of the dough. You can also use some oil to make them crispier.
Spoon a line of the filling up the center of the chapati, and top with one tsp of tangy coriander chutney each. Roll them up tightly, cut in half on the diagonal and serve hot!
