Also known as Dala Chhath, Chhath Puja is a 4-day long festival and is mainly celebrated in Bihar and Uttar Pradesh. This a 'Mahaparv’ or great festival in the regionsand Chhath Puja is as much about fasting as about the delicacies specially cooked during the celebrations.

The concept of Chhath revolves around revering the Sun God. Here the devotees offer prayers, urging to take care of every living being. During Chhath festival, it is a visual delight for the travellers to visit Bihar and feel the real essence of this festive mood.

During this festival, food plays a very important role. It involves the preparation of 'prasad' or offering made in ‘Ganga jal’ or water of Ganga river on a traditional 'çhulha' or stove made of mud which gives the prasad a smoky flavour. These dishes might look rather ordinary but taste divine. Here are some of the dishes and sweets prepared during the festival.

Bottle Gourd Sabzi

Chhath starts with preparation of bottle gourd sabzi in pure ghee. This simple recipe prepared in Ganga jal is offered with boiled rice. This dish symbolises the purification of the body for the festival.

Thekua

The most famous dish of the festival, thekuais a rich sweet as it is prepared with wheat flour, ghee, sugar and dry fruits. A tight dough of the above ingredients is prepared which is further shaped into small/medium tikkis and deep fried in pure ghee.

Rasiyaw or Rasia

Offered to Lord Surya on the second day of the festival, this dish is made with rice, jaggery, milk and water. To add flavour, it can further be garnished with powdered cardamom and chopped dry fruits. It is eaten with wholewheat poori.

Green Chana Masala

This simple recipe is prepared after soaking green chana overnight. The soaked chana is then sauteed in ghee with cumin seeds and green chillies. In some regions, they are offered raw with puris after soaking overnight.

Puris

This is the most common recipe of Indian cuisine, but it is scrumptious when prepared in ghee during the festival. It is made with wheat flour, water and ghee. A soft dough is prepared and small puris are deep fried and served with Rasiya and Green Chana Masala.

Kasar

Kasar is a famous Bihari recipe made during Chhath Puja festival. It best consumed during the winter season as the combination of powdered rice and jaggery keeps the body warm.
