Telangana cuisine is often hot & spicy, and both vegetarian and non-vegetarian dishes commonly use spices like tamarind, sesame seeds, red chillies, and asafoetida with bread/roti being their staple food. 1. Pachi Pulusu
This stew-like food resembles rasam, it is not made in the same way as a stew because the word pachi means "raw". The ingredients for Pachi Pulusu are tamarind, onions, chillies, jaggery, and a number of other spices. The tamarind merely needs to be soaked in lukewarm water to be used while preparing Pachi Pulusu.
2. Sarva Pindi
The one dish that best represents the state's culinary heritage is sarva pindi, a savoury pancake. It is known as Tapala Chekka and Ginne App too. To maintain the integrity of the dish it is cooked in a deep, round pan.
3. Golichina Mamsam
For non-veg lovers, you can try Golichina, which is a Telugu word that means "fried". Juicy pieces of mutton infused into a rich stew with regional spices are cooked over a low flame for hours so the meat can completely absorb the flavour of the curry. Onion, ginger, garlic, and a lot of masalas are used in its preparation. It is served with rice, dosa, or chapatis.

This brinjal-based main course is very popular in Telangana. It is made with a very small number of ingredients, almost no spices, and relies on tamarind and green chillies for flavour. 5. Shikampuri Kebab
It is a popular non-veg dish of Telangana. Mutton or chicken is used to make these meat patties, along with spices, ginger, garlic, eggs, and chana dal. Green chilli peppers, coriander leaves, and finely chopped onions go into the filling of patties. The patties are cooked till golden brown in hot oil before being served.
