In Punjab, the harvest festival known as Lohri is a happy and upbeat occasion for everyone. The majority of people congregate to enjoy the holiday as they sit around a fire and give it treats like popcorn, peanuts, and rewri. People sing and dance around the fire as it is worshipped. And what occasion can go without some delectable meals? Here are some suggestions for your multi-course Lohri meal.

Makki Di Roti

Ingredients:

  • 100 grams of Maize flour
  • 100 ml water

How To Cook:

Step 1: Add 100 grams of maize flour into a bowl and add 100 ml of water into it in intervals.

Step 2: Knead the mixture till it becomes a dough.

Step 3: Make small balls from the dough and flatten them out to make a roti.

Step 4: Cook the rotis on a tawa until each side turns crispy and brown.

Pindi Chole

Ingredients:

  • 250 grams of Chickpeas
  • Water
  • Salt
  • 3 Cardamom Pods
  • 4 Clove Pods
  • 1-inch Cinnamon Stick
  • 1 Bay Leaf
  • 1 Tea Bag
  • 1 tbsp pomegranate powder
  • 1 tsp cumin powder
  • 2 tsp red chilli powder
  • 1 tsp coriander seeds
  • 1 tsp cumin powder
  • 1 tsp chana masala
  • 1 tsp garam masala
  • 1 tsp dry mango powder
  • 1 tsp garlic
  • 1 tsp ginger
  • 1 tsp green chilli
  • Oil

How To Cook:

Step 1: Soak 250 grams of chickpeas in around 700 ml of water overnight.

Step 2: Add the soaked chickpeas with 500 ml of water to a pressure cooker and 1 tsp of salt, 3 Cardamom Pods, 4 Clove Pods, 1-inch Cinnamon Stick, 1 Bay Leaf, and 1 Tea Bag.

Step 3: Let everything cook for 4-5 whistles and after that take out the tea bag, bay leaf and cinnamon stick.

Step 4: In a pan add 1 tbsp of pomegranate powder and 1 tsp of cumin powder and roast them. Set the roasted masala side.

Step 5: In a separate bowl add 2 tsp of red chilli powder, 1 tsp of coriander seeds, 1 tsp of cumin powder, 1 tsp of chana masala, 1 tsp of garam masala, and 1 tsp of dry mango powder. Mix everything together and set it aside.

Step 6: Set a pan on medium heat and add 2 tbsp of oil, 1 tsp of garlic, ginger, and green chilli. Stir it for a few seconds and add the mixed masala after cooking the masala for a minute, add some chickpea water from when it was boiled.

Step 7: Add the boiled chickpeas along with the roasted masala and cook everything well until all the masalas get infused in the chickpeas.

Rewri

Ingredients:

  • 120 grams of sesame seeds
  • Water
  • 250 grams of jaggery

How To Cook:

Step 1: Add 120 grams of sesame seeds to a pan and roast them well.

Step 2: Add 50 ml water to a pan once it starts boiling add 250 grams of jaggery. Cook the jaggery till it melts and then add the roasted sesame seeds.

Step 3: Cook the mixture until it thickens. Pour the mixture into a bowl and once it cools down make small balls(Rewri) from it.
