This is a classic and nourishing dessert. Roughly chop pitted dates and process them in a food processor. Now, lightly roast a mix of your favourite nuts and seeds. Combine the date paste with the roasted nuts and seeds, and a touch of cardamom powder. Roll them into small ladoos.
For a traditional Indian sweet with a natural twist, use a jaggery and coconut filling for Modaks. Grate jaggery and mix it with fresh grated coconut, a hint of cardamom, and sometimes chopped nuts. Cook this mixture slightly until the jaggery melts and blends with the coconut, creating a moist, flavourful filling.
For a date-sweetened kheer, blend soaked and pitted dates into a paste and stir it into the cooked milk. For jaggery, dissolve it in a little water, strain it to remove impurities, and then add this syrup to the kheer after it's slightly cooled to prevent curdling.

To make a cocoa energy bar, blend pitted dates with unsweetened cocoa powder, oats, a dash of salt, and a butter of your choice in a food processor until it forms a sticky mixture. Press the mixture into a lined baking dish, and then cut into bars.
To make a gajar halwa, cook grated carrots in milk until they are soft. Next, take some grated jaggery and put it in, and continue to cook until melted and combined. Finally finish with some ghee, cardamom powder, and add roasted nuts. The gajar halwa is heavenly but also guilt-free.
