Inspired by the royal families of the Dogras of Kashmir, the Nizams of Hyderabad, the Mewars of Rajasthan, and the regal kitchens of Travancore, Chef Rehman curated an exquisite menu featuring his expertise and passion for Indian cuisine. “We wanted to revive the culinary gems that got lost behind the modern menus but offer an unparalleled gastronomical experience. In our interaction, he mentioned, “I wanted to highlight some culinary delights for the vegetarians. Whenever you talk about traditional cuisines, there’s usually a lot for the non-vegetarians but really fewer options for the vegetarians.”

My Experience

While it may get a little controversial here, the ‘Baingan Ka Bartha’ and the ‘Kishmishi Karela’ were out-of-this-world yummy! Vegetarians and non-vegetarians, you are in for a treat! The menu offers a wide range of options like ‘Tamater Jao Ka Shorba,’ ‘Champ Elachi Shorba,’ Paneer Khubani Tikka,’ ‘Aatishi Khumb Masala,’ ‘Kishmishi Karele,’ ‘Subz Martaban,’ ‘Paneer Tahiri,’ ‘Warqi Paratha,’ ‘Nawabi Baigan Bhurta,’ and more.

I highly recommend the ‘Tamater Jao Ka Shorba,’ which is nothing like the tomato soup you usually have and was actually made with healthy ingredients, ‘Kishmishi Karele,’ which is a must-try even if you hate karelas, and the ‘Nawabi Baigan Bhurta,’ which tastes nothing like the bland one you don’t want to look at!
