This Is How Carrots Can Be Used In Juices, Lunch, Desserts And More!

Either you start with a juice, have it for lunch or turn it into a dessert, you name it and it is possible. Here are some recipes using carrots to cater to every palate.

Carrots are extremely nutritious with several health benefits to their kitty. To tap in the goodness, there are several ways of consuming them. What's not there to like about this vegetable?It is crunchy, tasty, is a good source of beta-carotene, fiber, vitamin K, potassium and antioxidants, areweight loss friendly and help in improving your eye health. Either you start with a juice, have it for lunch or turn it into a dessert, you name it and it is possible. Here are some recipes to cater to every palate.

Gajar Matar Subji Recipe

Ingredients:

  • 250 grams carrots
  • 2 medium size tomatoes –
  • 1 cup green peas
  • 2-3 tbsp oil
  • Finely chopped 2-3 tbsp green coriander
  • A pinch of asafoetida
  • ½ tsp cumin seeds
  • 1 tsp coriander powder
  • Salt to taste
  • 1 finely chopped green chilly
  • 1-inch grated ginger
  • ¼ tsp red chilly powder
  • ¼ tsp turmeric powder
  • ¼tsp garam masala

Method:

  • Cut the carrots into ½ inch pieces and the tomatoes into small chunks.
  • Heat a pan with some oil.
  • When the oil gets heated, add cumin seeds, asafoetida, turmeric powder, ginger, green chilly and coriander powder to it, saute.
  • Then add carrots pieces into the pan along with green peas, red chilly powder, salt and 2-3 tbsp of water. Sit to mix all the ingredients really well.
  • Cover and cook the sabzi until carrot turns tender.
  • Now add chopped tomatoes, garam masala and chopped green coriander into the sabzi and mix.
  • Carrot green pea sabzi is now ready. Turn off the flame. Transfer the sabzi into a serving bowl.
  • Garnish this tantalizing and finger-licking carrot green pea sabzi with some coriander sprigs and serve it steaming hot along with chapatti, parantha, naan or rice.

Carrot Juice

Ingredients:

  • 6-8 carrots
  • 3 tbsp sugar or as required
  • 2 glasses of chilled water
  • 1 tbsp lemon juice

Method:

  • Wash and peel the carrots with the help of a peeler and chop them into pieces.
  • In a blender or a juice extractor, add the chopped carrot slices.
  • Add sugar and add chilled water into the blender.
  • Blend it into a smooth juice for 2-3 minutes.
  • Strain the juice completely by mashing the pulp as much as possible and discard the pulp.
  • Pour the juice into the glasses.
  • Add lemon drops into it and stir well.
  • Serve chilled.

Carrot Payasam

Ingredients:

  • 1-litre milk
  • 2 cups sugar
  • 2 tsp ghee
  • 1/4 cup raisins, cashews

Method:

  • Peel, chop and steam carrots in the pressure cooker.
  • Grind the carrots into a fine paste.
  • Heat 1/2 tsp of ghee in a heavy bottomed vessel.
  • Add the ground carrot and fry for a few minutes on medium heat.
  • Add the milk and boil. Keep stirring till it is reduced to half its quantity.
  • Next, add sugar and cook further till sugar is completely dissolved.
  • Switch off the stove.
  • In another pan, heat the remaining ghee and fry the raisins and cashew nuts, and garnish the payasam.
  • Serve hot or cold, as desired.
