Ingredients
- 2 sweet potatoes, peeled and cut into fries
- 2 tablespoons olive oil
- salt as per taste
- black pepper as per taste
Method: First, set oven to 450 degrees F. Now, grease a baking sheet and place in the oven. Put all the sweet potatoes in a bowl and add salt, olive oil, black pepper. Give a toss. You can now place all the sweet potatoes onto the baking sheet. Bake for about 20 minutes in a preheated oven. Continue baking until the fries turn out crispy and brown. Serve with sauce or mayonnaise.

Sweet Potato Vegetable Curry

Ingredients
- 1 sweet potato, peeled and cubed
- 1 medium eggplant, cubed
- 1 green bell pepper chopped
- 1 red bell pepper, chopped
- 2 carrots chopped
- 1 onion, chopped
- 6 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon turmeric
- 1 tablespoon curry powder
- 1 teaspoon cinnamon
- ¾ teaspoon sea salt
- ¾ teaspoon cayenne pepper
- 1 (15 ounce) can garbanzo beans
- ¼ cup almonds
- 1 zucchini, sliced
- 2 tablespoons raisins
- 1 cup orange juice
- 10 ounces spinach
Method: Take a large Dutch oven and put sweet potato, eggplant, peppers, carrots, onion and three tablespoons oil. Now, sauté for about 5 minutes. Pick up a saucepan and place 3 tablespoons olive oil, turmeric, curry powder, cinnamon, salt and pepper. Saute for 3 minutes. After this, you need to pour garlic and spice mixture into the Dutch oven with vegetables in it. Now you can add garbanzo beans, almonds, zucchini, raisins, and orange juice. Cover it up and simmer for about 20 minutes. Last but not the least, add spinach and cook for 5 minutes more. Your flavourful sweet potato vegetable curry is ready to serve. Dig in!
