Coconut Rice
Ingredients:
- 2 cups Cooked rice
- 2 cup Fresh grated coconut
- 2 tbsp Coconut oil
- 1 tsp Mustard seeds
- 1/2 tsp Cumin seeds
- 2 tsp Urad dal
- 2 tsp Chana dal
- 15-20 Curry leaves
- 3-4 Dry red chillies
- Pinch of hing
- 10-12 Cashew nuts
- 1 Green chilli chopped
- Salt as per taste
Directions:
In a pan, add coconut oil. When the oil is hot, add mustard seeds, cumin seeds, urad dal, chana dal and hing. Next, add curry leaves, dry red chilies and cashew nuts. Fry for sometime and then add green chilies and grated coconut. Keep stirring till the coconut becomes brown. Add salt and cooked rice. Mix well. Your coconut rice is ready.
