Monsoon is knocking at the door and it’s just another excuse to cook something delicious, and what else can be better than classic Chole Bhature! This North Indian delicacy is made with a hearty mix of boiled chholas, sautéed in onions and flavoured with all spices. It is super easy to make and will surely make you lick your fingers. Plus, it is a great option that you can try to accompany your chai and make the most of the rains.

Ingredients

For Dough

  • 2 cup all-purpose flour
  • 1 1/2 tbsp refined oil
  • 4 tsp curd
  • 1 cup refined flour
  • 2 pinches salt
  • 3 cup of water

For Chole

  • 2 cup chickpeas or chana. Buy Urban Platter Chickpea here at a discounted price of Rs 325.
  • 2 tbsp garlic paste
  • 1/2 tsp turmeric
  • Salt as required
  • 2 tsp ginger paste
  • 2 1/2 tbsp tomato puree
  • 2 tbsp chole masala. You can also prepare chole masala at home.
  • 2 small onion
  • 1 medium tomato
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala powder
  • 1 tsp red chilli powder
  • 2 gm coriander leaves

For Chole

  • Rinse the chickpeas a couple of times, then soak them for overnight.
  • The next day, pour water and put the chickpeas in a pressure cooker. Cook it over a high flame until you hear 3-4 whistles. If you don't have a cooker, then you can buy it here at a discounted price of Rs 1,036.
  • Take a pan and pour some oil in it. Once it starts turning colour, add cumin seeds, chopped onions and sauté for a few minutes.
  • Next add ginger garlic paste, chopped tomato and tomato puree in it. Saute them until they turn golden brown.
  • Now add turmeric powder, coriander powder, and chole masala and cook for few minutes. Add chickpeas in it and a little water. Mix well and simmer for 5-10 minutes.
  • Check the seasoning and add more spices if needed. If you don't have spices, then you can also prepare them at home.

For Dough

  • Mix refined flour and all-purpose flour in a large bowl. Put salt, yogurt, oil and knead the dough using water. But while kneading make sure you use as less water as possible.
  • Once the dough is ready, cover it with a damped cotton cloth and keep it aside for 30 minutes.
  • Take a kadhai and pour oil in it. In the meantime, make bhaturas out of the dough and deep fry them in the oil.
  • Serve hot with chole and salad!
