Prepare this powder at home and ditch the powder you get in the market which may not be genuine.
Take a heavy bottom pan and dry roast the coriander seeds.
Let it cool and then add the dals, methi and cumin seeds.
Dry roast them all together and transfer the mix into a blender and keep it aside.
Now take the mustard seeds and dry roast them til they start spluttering and then keep it aside.
Now, take some curry leaves, the black pepper and the red chillies and dry roast them.
Do so till the chillies puff and the leaves become crisp.
Now add the haldi powder and hing to the mixture and dry roast for 3 seconds.
Take all the ingredients and add it to the blender and blend until you get a smooth powder.
Now you can store the powder in a jar which is air tight and use it in your sambar recipes.
