With Navratri around the corner, during the fasts, we cannot really experiment much with our food. But we can always play with the same ingredients to have something tasty and interesting right? These cool recipes are an example of what we feel you can try. They are not difficult and turn out to be delicious as well!
Sabudana Thalipeeth by Chef Avinash Jha, Jaypee Vasant Continental
Ingredients
- 2 cup sabudana (tapioca pearls)
- 2 medium or large potatoes, boiled, peeled and mashed
- ½ teaspoon cumin powder (jeera powder)
- 4 tablespoon peanuts, roasted and coarsely ground
- ½ inch ginger, finely chopped or grated
- ¼ cup coriander leaves, chopped
- 1 teaspoon lemon juice
- 1 teaspoon sugar or add as required
- Rock salt (sendha namak) as required
- Peanut oil or ghee as required for frying
Method
- Pick and rinse the sabudana well till you get transparent water when rinsing and soak overnight.
- Next, strain it all. Make sure there is no moisture in them.
- Add the mashed potatoes and all the ingredients to the soaked sabudana. Mix well.
- Heat a non-stick frying pan.
- Spread 1 or 2 teaspoon of peanut oil or ghee on the pan.
- Apply some oil on your palms.
- Take some portion from the mixture and flatten it with your palms.
- You can also flatten on a ziplock bag.
- Place the flattened round (thalipeeth) on the frying pan.
- Fry till both sides are golden brown and crisp. repeat.
- If you have a large pan, you can cook 2-3 thalipeeths at the same time.
- Serve sabudana thalipeeth with a phalahari chutney or raita.
Kuttu Atta Pizza by Chef Amit Kumar, Jaypee Greens Golf & Spa Resort
Ingredients
- 300 gms kuttu atta
- Salt
- 10 gm sugar
- 5 gms yeast
- 100 gms mozerella cheese
- 200 gms peeled tomatoes
- 15 gms basil
- 50 gm cottage cheese
- 10 gms chopped green chillis
- 25 gm olive oil
- Salt to taste
- 10 gm black pepper crushed
- 5 gm oregano

Method
- Make a smooth dough using kuttu atta, salt, sugar, yeast and olive oil.
- Let it ferment for at least 4 hours.
- Knead the dough and let it sit for half an hour.
- For pizza sauce chop the peeled tomatoes.
- Add oil in a pan.
- Add tomatoes, chopped basil and green chillies, black pepper. Cook for 15 mins.
- Add salt to taste.
- Roll the dough in discs and spread pizza sauce on it.
- Put diced cottage cheese and bake in oven at 250 c for 5-7 minutes.
- Take it out and sprinkle with chopped basil and oregano.
- Pizza is ready to serve.
