Mira Kapoor recently posted a picture of her healthy lunch on Instagram. In the picture, we could see cauliflower rice and cottage cheese curry.

Healthy Cauliflower Rice Recipe Card

Ingredients

  • 1 cauliflower
  • 3 tbsp olive oil
  • salt to taste
  • 1 chopped onion
  • 2 tbsp coriander leaves
  • 1/2 tsp lemon juice

Step

  1. Step 1:

    Wash the cauliflower and cut all the greens.

  2. Step 2:

    Now using a grater, start grating cauliflower to turn it into rice.

  3. Step 3:

    If you don't want your rice to turn soggy then trasnfer the grated cauliflower to a paper towel to soak the excess moisture.

  4. Step 4:

    Now take a skillet and add oil. Next add chopped onions. Saute.

  5. Step 5:

    Next add grated cauliflower and mix all the ingredients. Top with salt and any other seasoning like pepper if you wish to.

  6. Step 6:

    You can enjoy this cauliflower rice with any curry of your choice. Like Mira Kapoor, you can enjoy it with cottage cheese which is a great source of protein. Other additions can be boiled chicken, sprouts or eggs.
