1. Baingan Bharta
First we talk about the classic baingan bharta recipe. Baingan Bharta is a delicious Indian dish made from roasted eggplant mixed with spices and herbs. It is a popular vegetarian dish that can be served as a side dish or as a main course. In the video, Jackie demonstrates the art of open flame roasting the eggplant to achieve that smoky flavour. He then skillfully explains how to roast eggplant with his special mix of garlic, lemon, onions, and tomatoes, creating a delicious blend of flavours. Ingredients For Baingan Bharta:
1 large eggplant
4 tbsp oil
2 chopped medium sized onions
2 chopped medium sized tomatoes
3 garlic cloves
3 green chilies
1 tsp garam masala powder
1 tsp cumin seeds
1 tsp coriander powder
1/2 tsp turmeric powder
1 tomato
1 tbsp chopped fresh coriander
salt as per taste
How To Make Baingan Bharta:
1. First, wash the eggplant and make small slits all over using a fork. This is done to help steam escape and the eggplant to cook evenly.
2. Now place the eggplant directly onto the gas flame and cook on medium to high heat. Rotate it frequently so that it cooks evenly on all sides. Cook it until the skin forms blisters and the eggplant turns soft. This might take around 10-15 minutes.
3. Once the eggplant is cooked, remove it from the flame and place it in a dish. Cover it with a lid and let it cool down for around 10 minutes.
4. Next, remove the charred skin from the eggplant using a knife lightly. You can also use your hands to remove it. Mash the eggplant thoroughly using a spoon or fork.
5. Heat oil in a pan. Add cumin seeds and let them crackle. Add finely chopped onions and sauté them for 2-3 minutes until they turn golden brown.
6. Now add minced garlic cloves, chopped tomatoes, green chilies, red chilli powder, turmeric powder, coriander powder, and garam masala powder. Mix everything well and saute for another 2-3 minutes until the tomatoes become soft and mushy.
7. Add mashed eggplant into the pan and mix everything well. Cook it for 5 minutes on low to medium flame.
8. Finally, add salt to taste and garnish with chopped coriander leaves. And it's ready to serve.

2. Anda Curry Patta Recipe

2 tbsp oil
2 egg whites
1 sprig of curry leaves
2 chopped green chillies
1/2 tsp black pepper
salt as per taste

How To Make Anda Curry Patta:
1. First, take a small bowl, break the eggs in the bowl, and only pour the egg whites in it. Then whisk the egg whites and set it aside.
2. Now put some oil in a pan and add the curry leaves and chopped green chillies to it. Allow them to crackle.
3. Add the tempering to the whisked egg whites.
4. Now heat the pan and pour the egg mix into it. Sprinkle pepper and salt as per your taste and cook it evenly.
5. Serve it hot with a paratha.
