2 cup all-purpose flour (maida)

4 tbsp refined oil

2 tsp ghee

1 cup soaked urad dal

2 tsp kasoori methi powder

1 tsp red chilli powder

2 tsp cumin powder

2 tsp coriander powder

2 tsp fennel seeds powder

2 tsp ajwain seeds

2 tsp cumin powder

2 chopped green chillies

1/2 asafoetida

1/2 teaspoon baking soda

How To Make Dal Kachori

1. In a large bowl, combine the all-purpose flour, salt, and ghee. Mix well and knead a smooth dough with water. The dough should be covered and kept aside.

2. Now wash the urad dal and soak it for ten minutes. Make a fine paste by grinding the soaked urad dal.

3. In a pan, heat some oil and add ajwain seeds, soaked urad dal paste, red chilli powder, cumin powder, coriander powder, fennel seeds, salt, methi powder, and baking soda.

4. To blend the spices, thoroughly stir and add a little water. Put out the flame once it is done, then let it cool. Now your dal stuffing is ready.

5. Take one of the dough balls and flatten it between your fingers. Now keep 1 tsp of filling in the middle of the rolled flour disc. Next, fold it using your fingers, then press it to form a kachori.

6. Continue with more dough balls. As soon as the oil in the pan is heated enough, deep-fry the kachoris until they are golden brown.

7. Your crunchy dal kachoris are ready to be served. You can have it with coriander chutney and a cup of masala tea.
