Winters are the best time to curl up in your blankets and binge on the heartiest dishes in the comfort of your homes. Cold weather definitely makes one hungrier as the temperature drop stimulates the appetite. So here are six warm and tasty dishes you can savour this winter.
Bajra Khichdi with Green Moong Dal (Pearl Millet Macaronic with Mung Bean Lentils)
This dish is a rich source of protein and a great comfort food. Pearl millets are combined with mung beans for a light yet satiating meal. All you need are pearl millets, mung beans, ghee, and a few choice Indian spices. The ghee and jeera gives it an appetising aroma and homely flavour. If you wish to jazz up the meal a bit, serve it with papad (Papadam), pickle, and curd.
Baingan Bharta (Eggplant)
Roasted, peeled, and mashed, the brinjals transform into a delicious dish that is a traditional Punjabi vegetarian food. You can cook it along with tangy tomatoes, onions, ginger, and green chillies to get the perfect taste. To make it into a main course, add a side dish of roti (flatbreads) or rice.
Sarson Da Saag (Mustard & Spinach)
Made with mustard leaves and spinach, this is a quintessential Punjabi dish. In Northern India, it is served with makki di roti (maize flour flatbread). We usually use spinach leaves, but to experiment one can also try bathua (white goosefeet) or radish leaves. It is best enjoyed during winters as the quality of the ingredients is better in this season.
Hare Lehsun Ki Sabzi (Green Garlic Vegetable)
This is one of the quicker recipes from the list. Had a long and tiring day? This is the ideal dish for you to make. All you need is to heat ghee in a pan, add chopped green garlic followed by turmeric powder and chilli powder, with some salt and mix it well. Your dish is ready to serve! However, make sure to heat the ghee well because the rest of the ingredients will automatically get cooked in the heat.
Hot Kand Tikkis (Purple Yam Patties)
If you’re bored with potato-based snacks, using purple yam is the perfect twist to add to your classic tikkis. You can add coriander to add a punchy flavour to the snack. This is a fantastic choice for your vrat or upvas (fast). However, deep fry these tikkis on a medium flame only.
