Fafda is a famous dish which many Gujaratis have even for breakfast. Generally, people pair it with hot jalebis to balance the sweet and salt but for health's sake, I recommend that you have one thing at a time as fafdas are as much of fried food as jalebis.

Ingredients

  • 2 cups besan
  • ¼ tsp haldi
  • ¼ tsp ajwain
  • ½ tsp red chilli powder
  • salt to taste
  • ¼ tsp baking soda
  • Water to knead dough
  • Oil for deep frying plus 2 tbsp oil for dough making

Step

  • Step 1 :

    In a bowl, combine besan, haldi, red chilli, ajwain, baking powder, oil and salt.

  • Step 2 :

    Once combined well, add a little warm water and knead the dough.

  • Step 3 :

    Let the dough sit for 5 minutes so that it becomes smooth and soft.

  • Step 4 :

    Coat the dough with a little oil and then cover it with a moist muslin cloth and give it a rest for half an hour.

  • Step 5 :

    After 30 minutes, knead the dough again and make small balls and press them into a cylindrical shape.

  • Step 6 :

    Now on a wooden board, place the dough and press one side and stretch it thin in a forward direction.

  • Step 7 :

    Scrape it off from the board with a knife without damaging the fafda.

  • Step 8 :

    Deep fry the strips in hot oil but take only few at a time because they need space to puff up. Keep the flame on medium and stir occasionally.

  • Step 9 :

    Fry until they turn golden and crispy.

  • Step 10 :

    Serve the fafda with green chutney, chillies for snacks or with kadi or dal for lunch.
