Make something nice this weekend if you are bored with dal, rajma and a normal sabzi with rice or roti. Instead, make this yummy Rajasthani recipe which is healthy and good for a nice get-together lunch or dinner when everyone has time and wants to spend some time without the phone and talk and enjoy some good laughter over food.
Spicy Gatte Ki Sabzi
Ingredients
For Dough of Gatte:
- 1 cup besan
- 1 tsp coriander powder
- 2 tsp mint Leaves
- 1 tsp chopped ginger
- 1 tsp roasted cumin seeds
- 1/2 tsp haldi
- 1/4 tsp baking soda
- 1 tsp lal mirch
- 1/2 tsp salt
- 2 tbsp curd
- 1 cup water
For Making Gatte:
- 2 cups Water
- Oil
For Gravy:
- 1 tbsp oil
- 1 tbsp ghee
- 2 whole red chillies
- 6-7 cloves
- 1 cinnamon stick
- 2 chopped onions
- 1/2 tsp salt
- 1/2 tsp haldi
- 1/2 tsp garlic
- 1/2 tsp lal mirch
- 1/2 tsp dhania powder
- 1/2 tsp hing water
- 2 tsp coriander leaves
- 1 cup curd
- 2 cups water
Method
For Dough of Gatte:
- Mix besan, cumin seeds,baking soda, red chilli powder, salt,haldi, and coriander powder in a large deep bowl.
- Mix in the mint leaves, ginger and curd.
- Now, add the required quantity of water and knead a soft dough.
- Divide the dough into equal portions and roll each portion into long cylindrical shapes.

For Preparing Gatte:
- Boil water in a pan and then add the cylindrical gattas in the boiling water.
- Boil until they are fully cooked.
- Check by inserting a knife in the cylindrical rolls whether they have cooked properly.
- Let them cool down and then cut into long pieces.
- Now heat oil in a non- stick pan and shallow fry the gattas on medium flame till golden brown.
For Preparing Gravy:
- In a heavy-bottomed pan heat oil and ghee.
- Add red chilli whole, cloves and cinnamon stick.
- Saute for 20-30 seconds.
- Now add the chopped onions and cook until soft and translucent. Don't forget to add onions as they are really good for your health besides amping up the taste of the dishes we eat.
- Add salt and turmeric powder. Saute well.
- Now put garlic, red chilli powder, coriander powder, hing water and coriander leaves.
- Combine all the ingredients thoroughly. You can add more or less red chilli powder as per your taste.
- Add curd and mix well. Cook until oil appears on the surface. Use Canola Oil if you are a new mother for its health benefits are amazing!
- Put water in the mixture and bring it to boil over medium flame.
- When it becomes a semi-thick gravy add the fried gatte and cook further.
- Stir with light hands and coat the gatte with gravy.
- Garnish with green chillis and fresh coriander leaves.
- Serve.
