After that, add sliced kundru and let it cook till they are half-cooked and then, add the spices and mix well. Add a little water, cover it with a lid, and cook thoroughly. Ingredients

  • 1 tablespoon of oil
  • 2 cloves of garlic
  • 1 medium-to-large onion
  • coriander leaves
  • 1 whole red chilli
  • 1 teaspoon of coriander powder
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of cumin seeds
  • 1 teaspoon of red chilli powder
  • 1 teaspoon of amchur powder
  • 1/4 teaspoon of garam masala powder
  • salt as per your preference
  • 400 grams of kundru
  • water

Step

  • Step 1 :

    Thoroughly rinse 400 grams of kundru and dry them. Then, slice them and set them aside.

  • Step 2 :

    Chop two cloves of garlic, one onion, and coriander leaves, and keep them aside.

  • Step 3 :

    In a pan, heat one tablespoon of oil and add one teaspoon of cumin seeds, diced cloves, and a whole red chilli. Cook for a minute.

  • Step 4 :

    Now, add the chopped onions and cook them till translucent.

  • Step 5 :

    Add the sliced kundru pieces and cook them till half-cooked. Add the spices and combine everything well together.

  • Step 6 :

    Add a splash of water and cover with a lid. Cook the vegetables thoroughly.

  • Step 7 :

    Garnish with diced coriander leaves and enjoy with a side of rice or chapati.
