Ingredients For ‘Eggs Kejriwal’:

  • Two eggs
  • Two slices of bread
  • One tablespoon butter
  • One onion chopped
  • Two green chillies chopped
  • One tablespoon fresh and finely chopped coriander
  • Salt and black pepper to taste
  • Grated mozzarella or cheddar cheese

Easy-Peasy Steps To Whip Up An ‘Eggs Kejriwal’ At Home:

  • Heat a pan and toast the two bread slices on it by applying a little butter on them.
  • Place them aside on a plate, once the toasts are golden brown.
  • Now, add a little more butter in the same pan and fry two eggs sunny side up until they reach a desired gooey consistency.
  • Put the eggs aside on a plate.
  • Add chopped onions and green chillies in the pan and sauté them.
  • Place the toasted bread slices on a plate and spread the onions and green chillies on it.
  • Next add grated mozzarella or parmesan cheese on top of the onion and green chillies.
  • Place one fried egg on each toasted slice of bread.
  • Top this with onion and cheese.
  • Now sprinkle salt and pepper as per your taste over the eggs.
  • Serve the ‘Eggs Kejriwal’ piping hot with tomato ketchup and coriander chutney.

  • 3-4 eggs
  • 2 pieces of pav
  • 1 finely chopped onion
  • 1 finely chopped tomato
  • 2-3 finely chopped green chillies
  • 1 tablespoon chopped coriander
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon Kashmiri red chilli powder
  • Salt to taste
  • Butter
  • Coriander chutney
  • Jaggery and imli chutney

  • Whisk eggs in a bowl and add onion, tomatoes, green chillies, and coriander

  • Add turmeric, Kashmiri red chilli powder, and salt and whisk well.
  • Heat one tablespoon of butter in a pan and pour the whisked batter into it to make the omelette.
  • Fry the omelette until it turns golden-brown and cut it nto half and keep it aside.
  • Now cut pav from the middle into pieces and toast them with butter on the pan.
  • Add coriander chutney and jaggery-imli chutney and one half of the pav.
  • Keep the omlette in between and close the sandwich with the other half of the pav.
  • Enjoy the hot and crispy ‘Egg Benjo' with the dip and beverage of your choice
