Prepare hung curd by pouring thick creamy curd over a muslin cloth placed on a strainer and rested over a bowl.
Let the water drain overnight; once done, let it rest in a bowl.
In a wok, roast besan for about 5 minutes until light brown.
Add finely chopped onions, ginger, green chillies, and coriander leaves with cumin powder, garam masala, roasted besan, and black or white pepper powder in the hung curd.
Mix the ingredients to make it lump-free and refrigerate for about 2 hours.
Heat some oil in a frying pan. Meanwhile, shape your kababs.
Add the dahi kababs into the hot oil and let them fry until golden brown from both sides.
Serve them hot with sprinkled chaat masala, onion slices, and chutney or raita on the side.
