Extremely low in calories for an Indian dessert, this is a wonderful sweet recipe that is healthy and tasty at the same time. It sounds very healthy but the taste is like any other rich barfi that you crave.

This is a low calorie and really yummy barfi which will impress everyone.
First the seeds need to be roasted till they start spluttering and turn warm brown.
Then remove them from the pan into a bowl and let them cool down.
Take the same pan and heat ghee and khoya and saute. Bring it to a thick consistency and saute till it turns a little brown as well.
Turn off the heat and the fold in the roasted melon seeds and let the mixture cool down.
In another pan, warm some water and sugar on low heat to make the sugar syrup.
Mix immediately with the ghee and khoya mixture, and stir till it all becomes one into a batter. Blend fast to avoid lumps.
Grease the plate with some ghee or oil and transfer the batter into it. Let it cool.
Once it cools down, cut into pieces with a sharp knife and serve.
