They say if you can’t dance if you have two left feet but what about the majority of us who can’t bake? What do we do? After looking at endless Instagram and Facebook posts where people post pictures of perfectly baked cakes, it gets a tad depressing after a while as you turn out batch after batch of either under-cooked or burnt cakes that resemble anything but a cake. With Christmas around the corner, the non-bakers once again want to realise their dream of making the perfect Christmas cake that will not just taste good but also earn them rave reviews from their folks. Well if you are one of them (just like me!) then worry not as help is at hand. Just grab hold of this no-bake Christmas cake recipe which is easy to make and you will have a lip-smacking delight in this festive season for everyone.

Ingredients

  • Dried fruit cake mix: 2 cups
  • Candied ginger: 1 knob, finely chopped
  • Brandy: 3 tablespoons
  • Walnuts: 1 cup
  • Cashew nuts: 1 cup
  • Pitted dates: 1 cup
  • Ground cinnamon: 1 ½ teaspoons
  • Ground ginger: ½ teaspoon
  • Mixed spice: ¼ teaspoon
  • Nutmeg: A big pinch
  • Cocoa powder: 3 tablespoons
  • Salt: A pinch of salt
  • Coconut oil: 1 tablespoon
  • Maple syrup: 1 tablespoon
  • Chopped and preserved fruits: ½ cup

Method Of Preparation

  • Pour brandy in a bowl and mix the candied ginger pieces with the dry fruit cake mix. Set aside.
  • Toast the nuts and grind the dates in a mixer
  • Now add the cocoa powder, coconut oil, all spices, salt and maple syrup to the mashed up dates.
  • Grind the toasted cashew nuts and walnuts till they have some texture and add them to the date mix
  • Using your hands, start kneading to make sure that the entire mix has even distribution of all ingredients
  • Grease a cake bowl, press this cake mix into it, cover with foil and let it freeze for 3 hours.
  • To de-mould it, remove the cake by running a blade along the sides of the bowl. Serve with chopped preserved fruits.

You can keep this no bake Christmas cake chilled for upto 3 weeks before Christmas and enjoy it on X-Mas Day with your friends and family!
