Sicilian Style Crispy Fried Dumplings: Arancini Siciliani Recipe Card

Ingredients

  • 200 grams arborio Rice
  • Flour to coat
  • Salt to taste
  • Oil for frying
  • 5 grams chopped thyme leaves
  • 100 grams cooked minced seasoning adjusted lamb
  • 50 grams shredded mozzarella cheese
  • 30 grams grated parmesan cheese
  • 25 grams de-shelled and mildly roasted pine nuts
  • Bread crumbs for coating
  • Egg wash to coat

Step

  • Step 1 :

    In a Pan cook Arborio Rice by gradually adding vegetable stock. This process should take 20-25 mins.

  • Step 2 :

    Add thyme and salt to taste.

  • Step 3 :

    Let well cooked sticky rice come at room temperature. I suggest, use a flat plate to spread this rice for faster results.

  • Step 4 :

    Once cooler, add Parmesan cheese and mix well.

  • Step 5 :

    Take smaller portions of this rice mixture (25-30 grams) on to your palm; flatten with thumb and stuffed it with pre-cooked lamb mince, followed by a little shredded mozzarella and 1 pine nut.

  • Step 6 :

    Form them into balls making sure that no filling oozes out. Let these balls rest in the fridge for ½ an hour.

  • Step 7 :

    Dust the dumplings with flour; roll it in the beaten egg wash and coat properly and evenly with bread crumbs.

  • Step 8 :

    Heat oil in a deep dish on a medium heat.

  • Step 9 :

    Fry these Arancini balls golden/ till cooked to the core.
