Sago is a rich source of antioxidants and resistant starch. It has low levels of cholesterol, and it helps to reduce the risks of heart diseases. In India, we often eat sago during fasting. It can be used to create a delicious sweet or savoury dish.
How To Make
- Put one and a half cups of milk in a pan.
- Add 1/3 cup of sugar and 1/4 cup of milk powder.
- Keep mixing it on a medium flame to prevent the formation of lumps. Continuous mixing will also prevent the burning of ingredients and increase the rate of dissolving sugar.
- Once the mixture is simmer boiling, turn off the heat, and let it cool. However, keep stirring the mixture.
- Once cool, transfer it to a deep bowl or keep the same pan in the refrigerator.
- Take another pan and put at least three cups of water into it.
- Once you see the bubbles start to form, add 1/4 cup of sago pearls.
- Cook sago for at least 10 minutes or until the pearls become transparent. Stir them occasionally in between.
- Strain the pearls and run them under cold water to remove excess starch and stop further cooking.
- While sago cools off, soak basil seeds in water for about 8-10 minutes.
- To the milk mixture, add sago and soaked basil seeds.
- Add a teaspoon of vanilla essence and mix everything well.
- You can add sliced dry fruits like pistachios, cashews and almonds. Add diced fruits like grapes, apples, mangoes, strawberries and bananas.
- Mix everything and serve it cool in a wide glass or dessert bowl.
