The popularity of veganism has grown in India in leaps and bounds. A vegan diet avoids all animal products and their byproducts. This list includes meat, eggs, dairy, honey and so on. It has a lot of advantages for your health, including less risk of cardiovascular diseases, clearer skin and improved digestion. Veganism has emerged as a great option for people who want to do their bit for the environment. Here are three healthy and delish vegan recipes by Chef Saurabh Singh Chandel, Executive Chef, Crowne Plaza, Greater Noida.

Vegan Cheesecake with Avocado

Ingredients:

  • 1000 grams of seedless dates
  • 60 grams of walnuts
  • 500 grams of soaked cashew nuts
  • 3 grams of vanilla
  • 10 grams of lemon juice
  • 45 grams of sesame seeds
  • 80 grams of maple syrup
  • 60 grams of peanut butter
  • 5 grams of fresh coconut cream
  • 30 grams of fresh strawberries
  • 30 grams of fresh avocado
  • 60 grams of caramel
  • Almond milk

Method:

  • Heat the oven to 170 degrees celsius and keep it on.
  • Prepare a puree with almond milk, lemon zest and juice.
  • Crush the dates and walnuts for the base and bake the crust.
  • Coat the pan with butter and wrap it in a foil.
  • Mix the peanut butter and caramel together. Then add maple syrup.
  • Add vanilla and the puree.
  • Add the rest of the ingredients and fold them well.
  • Bake the mixture in the preheated oven for 35 to 40 minutes. Once done, cool it till it reaches room temperature.
  • Garnish it with strawberry and fresh avocado.
  • Refrigerate the dish.

Gluten-Free Brownie

Ingredients:

  • 1000 grams of butter
  • 60 grams of castor sugar
  • 500 grams of eggs
  • 20 grams of almond powder
  • 10 grams of sunflower seeds
  • 45 grams of linseed
  • 5 grams of baking powder
  • 75 grams of cocoa powder
  • 120 grams of dark chocolate

Method:

  • Preheat the oven at 180 degrees celsius.
  • In a large bowl, beat together the powdered sugar and soft butter till it is well combined.
  • Add the melted chocolate to the mixture and stir well.
  • Add the eggs and beat it again.
  • Fold in the cocoa powder, linseed, almond flour, sunflower seed baking soda and salt. Add the vanilla and mix it well.
  • Fold in the dark chocolate chips and garnish it with the remaining dark chocolate chips.
  • Transfer the batter to the pan and bake it for 30 to 35 minutes.
  • Once done, let it cool down and enjoy the dish.

Jaggery Granola

Ingredients:

  • 364 grams of oats
  • 60 grams of coconut powder
  • 40 grams of pistachio
  • 50 grams of almonds, sliced
  • 90 grams of jaggery
  • 100 grams of maple syrup
  • 4 grams of salt
  • 55 grams of black currant
  • 50 grams of glaze cherry

  • In a wide pan, roast the oats until it gives a golden brown colour. Once done, set it aside.
  • Roast the nuts and seeds separately in the same pan with a tablespoon of oil till they are light brown. Set this aside as well.
  • Now add jaggery to the pan and heat it on a low flame till it melts entirely.
  • Mix the roasted oats with the jaggery in the pan and stir it well until they blend together. Keep stirring the mixture constantly to avoid burning it.
  • Add the nuts, black currant and seeds to the mixture. Roast all the ingredients on low heat until the jaggery becomes caramelised and the granola turns dark golden brown in colour.
  • Add the rest of the items to the mixture and stir it well again. Turn off the heat and continue tossing all the items together for another minute. Then bake it at 200 degrees celsius for eight minutes.
  • Now, cool the granola completely and transfer it to an airtight container.
  • Serve the granola for breakfast or snacks with milk to enhance the taste.
