Known with varying names in different countries, stuffed capsicum or peppers is that one recipe which is loved by all food aficionados around the world. It is not just a unique way of adding a tinge of flavour to your otherwise, monotonous lunch or dinner scenes but it can also be credited with being healthy. Where else would you find fresh veggies with cheese,corn and even meat packed into one?

For centuries, the recipe of stuffed capsicum or peppers has been creatively reinterpreted. Known as ‘chile rellenos’ in Mexico, a mixture consisting of meat, veggies with cheese is stuffed into locally available pablano peppers. In Tunisia, the same recipe is referred to as ‘Fil Fil Mashi’ where bell pepper is stuffed with lamb, rice, and sprinkled with nutmeg, saffron, and cardamom.

Similarly in India, the traditional ‘bharwa Shimla mirch’ has also gone through different phases of change. Here is an easy breezy recipe for you.

Ingredients

  • 3 medium-sized Capsicum
  • 3 small Potatoes
  • 200 grams of cheese
  • 100 grams of peas
  • Half a carrot ( shredded)
  • 100 grams of corn cobs
  • 150 grams of cooked rice ( spiced with chilly flakes and turmeric)
  • 2-3 cloves of garlic
  • A small piece of ginger ( shredded)
  • 50 grams of pomegranate
  • 1 tablespoon of salt
  • 1/2 tbsp of black pepper
  • 1/2 turmeric and coriander powder
  • A bunch of mint leaves
  • Chilli powder - as per taste
  • 2 tablespoon of olive oil

Method
  • Heat up some oil in a pan
  • Add cumin seeds and fry chopped onions
  • Add potatoes, capsicum, carrot, corn cobs, rice and peas too
  • Let them cook a bit
  • Now add grated ginger to the mixture
  • Add salt and pepper with a half a cup of water, so that all ingredients are cooked well
  • Add cheese and pomegranate to garnish. You filling is ready
  • Open the capsicums and deseed them. Scrap their interiors well to form a cavity
  • Fill them up with the mixture and garnish with cheese and chopped coriander
  • Now prepare a hot pan with a bit of oil to roast these stuffed peppers
  • Your stuffed capsicum is ready to serve
