A healthy and delectable sweet made from strained curd, shrikhand is an Indian sweet which is low fat, rich and creamy flavoured with saffron, cardamom, diced dried fruits. Here are few basic and simple recipes that we believe would be of great use if you have guests coming over to your place.
Mango Shrikhand

Ingredients:
- Ripe mango pulp 1 cup
- Hung yogurt 3 cups
- Powdered sugar sifted ½ cup
- Green cardamom powder a pinch
- Nuts chopped 2-3 tablespoons
Method:
- Place yogurt in a bowl.
- Add powdered sugar, green cardamom powder, half the nuts and mango pulp and whisk well till well blended.
- Refrigerate for thirty to forty five minutes.
- Transfer into earthenware bowls and serve chilled garnished with remaining nuts.
Basic Shrikhand

Ingredients:
- 3 cups curd
- 1/4 cup + 2 tablespoons powdered sugar
- 1/2 tsp cardamom powder
- 10-15 almonds and cashew nuts, chopped roughly

- Use either homemade curd or curd bought from the store. But make sure it isn't sour.
- Strain the yogurt via a muslin loth or a cheese cloth.
- Hang curd in a friege for atleast 6 to 7 hours or until almost all the water is drained.
- Place an empty bowl below it to collect the drained liquid from the curd.
- Curd should become very thick.
- After 6 to 7 hours, transfer the thick strained curd to a bowl.
- Discard the water or use it for making chapati at home.
- Add your sugar and the cardamom to the curd and beat the whole mixture properly.
- Next add all the dry fruits to the bowl and mix it well. Refrigerate the shrkhand for atleast an hour before serving it chilled.
