Ingredients

  • 1 Large Potato
  • 2 Medium Tomatoes
  • 1 Tsp Black Pepper Powder
  • 1 Tsp Cumin Seeds
  • 1/4 Tsp Red Chilli Powder
  • 1 Cup Water
  • 1/2 Tbsp Ghee
  • Coriander Leaves For Garnishing
  • Rock Salt As Per Taste

Step

  • Step 1 :

    Pressure cook or boil the potato with little rock salt until done but they should not be crumbly. Let them cool down and then peel and dice them.

  • Step 2 :

    Now, while they are cooling, heat some oil or ghee in a non-stick or a kadhai and splutter the cumin seeds.

  • Step 3 :

    Saute the chopped tomatoes or you can even puree them.

  • Step 4 :

    Once they are cooked and the oil starts leaving the sides.

  • Step 5 :

    Add the black pepper powder, red chilli powder, rock salt and mix well.

  • Step 6 :

    Add the chopped potatoes and stir again.

  • Step 7 :

    Add water.

  • Step 8 :

    Cook the potato and tomato curry for 7-8 minutes on a low flame until it thickens.

  • Step 9 :

    Mash them with a spoon to thicken the gravy further.

  • Step 10 :

    Garnish with coriander leaves and serve with vrat ki roti.
