Ingredients For Puran Poli

  • 2 tablespoon ghee
  • 1 cup blanched chana dal
  • 1 cup all purpose flour
  • 1/2 teaspoon refined oil
  • 1 cup powdered jaggery
  • salt as required
  • 1 teaspoon powdered green cardamom
  • 1/2 teaspoon fennel seeds powder
  • 1 teaspoon nutmeg powder
  • 1/4 teaspoon turmeric
  • 1/4 cup water

Step 1: Heat a saucepan over medium heat and add some ghee. Once the ghee melts, add the blanched dal and roast for 2-3 minutes. Then, add jaggery, ginger powder, cardamom powder, fennel powder, and nutmeg powder. Mix everything together and cook the dal for another 2-3 minutes. When it's done, turn off the heat and let it cool. Finally, mash the dal using a masher.

Step 2: In a large mixing bowl, combine flour, turmeric, and a pinch of salt. Add a bit of oil and mix everything together. Gradually add water, a little at a time, and knead until you get a firm dough. Divide the dough into three equal parts and set them aside.

Step 3: Take one of the dough parts and flatten it slightly to create a small indentation in the center. Then, place the chana-jaggery mixture in the center of the dough. Fold the dough over the filling and shape it back into a ball. Lightly grease your hands and use them to flatten the dough into a roti, or alternatively, use a rolling pin to roll it out.

Step 4: Heat a non-stick pan over medium heat and place the roti on it. Add a small pat of ghee and cook the roti evenly on both sides until it's nicely browned. Serve hot, or enjoy with a cup of tea or coffee.
