Carrot and radish pickle or gajar mooli ka aachar is one of the most loved pickles in India, especially during the winter season. Both radish and carrots are available this season. How about turning them into sour and spicy pickles? There is nothing like preparing fresh pickles at home. You may feel like it is a difficult task to prepare pickles at home but it isn't. 

Carrot and radish are winter veggies and no better time than preparing a delicious pickle this season. You can easily prepare this pickle at home with a few ingredients. Make sure that you keep your home prepared pickle covered at all times.

Ingredients

  • 400 gm Carrot
  • 500 gm Radish
  • 150 gm Green Chillies
  • 100 gms Adrak
  • 3 tbsp Mustard Seeds
  • 2 tbsp Red Chilli powder
  • 2 tbsp Fennel Seeds or saunf
  • 1 tsp Fenugreek Seeds or methidana
  • 1/3 tsp Asafoetida
  • 1 tsp Turmeric Powder
  • 3 tsp salt
  • 1/5 tbsp White Vinegar
  • 3/4 cup Mustard Oil

Step

  1. Step 1:

    Wash carrots and radish and peel them. Cut them into thick slices.

  2. Step 2:

    Next wash green chillies and slit from the center to make two pieces.

  3. Step 3:

    Wash ginger and chop into thick slices.

  4. Step 4:

    In a big bowl, add all carrot, radish, ginger and green chilli. Sprinkle salt and mix well.

  5. Step 5:

    Next add vinegar to the veggies as it works as a preservative for the pickle.

  6. Step 6:

    In a pan, take some oil and add all dry spices. Add mustard seeds, turmeric powder, fennel seeds, red chilli powder.

  7. Step 7:

    Now add this spice mix to the carrot and radish bowl. Mix well.

  8. Step 8:

    Take a clean jar and transfer the pickle to it. You can heat more oil and add to the pickle.

  9. Step 9:

    If kept at room temperature, this pickle can be stored for 2-3 months.
