The rich velvety texture, the tempting aroma and the yummy taste of plums — this cake is a classic and evergreen dessert which you can bake all-year long, and not just in winter season. But they are best enjoyed on and around Christmas and New Year's.
Preparation of the plum cake
The prep time for the easy-peasy plum cake recipe is just 10 to 15 minutes. It takes approximately 40 minutes to bake the cake and get a lovely brown and golden colour. The servings are for four people.
Plum cake recipe
Ingredients
- 1 cup and 3 tablespoons of brown sugar
- 1 cup of refined flour
- ½ tsp of baking powder
- ½ cup of softened butter
- 2 tablespoons of chopped walnuts + raisins
- A few drops of vanilla essence
- 3 eggs
- 1 tsp of lemon zest
Method
Step 1
Heat the oven to 160° C. Grease the cake pan. Sieve the baking powder with the flour into a bowl. Mix the walnuts and raisins into the batter.
Step 2
In another bowl, combine the brown sugar and butter with the vanilla essence. While stirring the mixture continuously, add the eggs and lemon zest. Use sieved flour to fold the mixture, and stir.
Step 3
Pour the cake batter into the greased cake pan and bake it for 15 to 20 minutes in the preheated oven. When done, remove the pan from the oven and put it on a rack to cool.
Step 4
Slice the cake and serve with garnishings such as chopped walnuts and raisins as per taste.
