The cool monsoon breeze accompanied with a hot cup of tea and platter full of pakoras to snack, paint a perfect picture for all those food aficionados on a lookout for comfort food. However, this humble Indian snack recipe has come a long way and is now available in a variety of versions. All you need is to get a bit creative with the prepared batter and ingredients you want to fry. Known by a variety of names such as 'bhajiya', 'ponaco', 'bhajji' or fritters, when dipped in spicy chutneys, they can tickle some of the most dormant taste buds.
So, just in case you want to try a few of them out on your own, we suggest go ahead and get your hands dirty.
Spinach Pakora/ Fritters
- 2 large onions
- 2 medium-sized bunches of spinach
- 7 tablespoons of chickpea flour
- Salt – to taste
- 1 tsp red chilli powder
- ¼ tsp turmeric powder
- ¼ tsp roasted coriander seeds powder
- ¼ tsp ajwain(carom seeds)
- Oil to fry
- a pinch of baking soda
- Cut onion into thin slices
- Mix the finely chopped spinach, onions with chickpea flour, salt, and other dry spices.
- Add a tablespoon of cooking oil and water, to ensure the batter is of the right consistency.
- Now, take the batter in small portions and deep fry it in oil
- Serve it with cold chutneys or dips
Bread Pakora/ Fritters
Ingredients
- 1 loaf of bread
- 10 tablespoon of chickpea flour
- Salt – to taste
- 1 tsp red chilli powder
- ¼ tsp turmeric powder
- ¼ tsp roasted coriander seeds powder
- ¼ tsp ajwain(carom seeds)
- Oil to fry
- A pinch of baking soda
- Cut each slice of bread into halves
- In a bowl mix chickpea flour, salt, and other dry spices.
- Add a tablespoon of cooking oil and water, to ensure the batter is of the right consistency.
- Now soak each bread piece in the batter and start frying
- Serve it with cold chutneys or dips
Cauliflower Pakora/ Fritters
Ingredients
- 250 to 300 grams of cauliflower
- One medium sized onion
- 10 tablespoon of chickpea flour
- Salt – to taste
- 1 tsp red chilli powder
- ¼ tsp turmeric powder
- ¼ tsp roasted coriander seeds powder
- ¼ tsp ajwain(carom seeds)
- Oil to fry
- A pinch of baking soda
- Cut cauliflower into small florets
- Cut onion into thin slices
- In a bowl mix chickpea flour, salt, and other dry spices.
- Add a tablespoon of cooking oil and water, to ensure the batter is of the right consistency.
- Now soak each piece of cauliflower in the batter and start frying
- Your cauliflower fritter or pakoras are done
- Serve it with cold chutneys or dips
