Ingredients

  • 1 cup of tamarind water

  • ½ cup of toor dal
  • 1 onion
  • sliced
  • 1 cubed carrot
  • 1 cubed potato
  • 2 slit green chillies
  • 1 drumstick
  • cut into 4 inch pieces
  • ¼ tsp of turmeric powder
  • 3 tbsp of sambar powder
  • 1 chopped small bunch of coriander leaves
  • for garnish
  • For tempering: 1 tbsp of coconut oil
  • ½ tsp of black mustard seeds
  • 5-6 fenugreek seeds
  • ½ tsp of hing
  • A few curry leaves
  • 4-5 sliced shallots

Step

  • Step 1 :

    Cook the toor dal with water in a pressure cooker.

  • Step 2 :

    Meanwhile make some fresh sambar powder.

  • Step 3 :

    Soak a small ball of tamarind in warm water and squeeze to extract the juice.

  • Step 4 :

    Discard pulp and seeds.

  • Step 5 :

    Cook the vegetables and green chillies in the tamarind water and add in another cup of water until soft.

  • Step 6 :

    Add the sambar powder, turmeric powder, and the dal. Bring to boil.

  • Step 7 :

    If the sambar is too thick, add more water and bring to boil and if it's too watery, boil until you are fine with the consistency.

  • Step 8 :

    Add salt and mix well.

  • Step 9 :

    Heat the oil for tempering in a small pan.

  • Step 10 :

    Add the mustard and then the rest of the ingredients.

  • Step 11 :

    When the shallots turn golden brown, dunk into the prepared sambar.

  • Step 12 :

    Mix well and garnish with chopped coriander leaves.
