How To Make Chocolate Mud Cake Recipe at Home
- Begin by preheating your oven to 160°C (325°F). Prepare your cake pan by greasing it well and lining the bottom with parchment paper. This will prevent the cake from sticking to the pan.
- In a saucepan, combine the butter, instant coffee powder, and water. Heat this mixture over low heat until the butter is fully melted and the mixture begins to simmer. Once it’s simmering, remove the saucepan from the heat and add the finely chopped dark chocolate. Stir well until the chocolate is completely melted and the mixture is smooth.
- In a large bowl, whisk together the flour, cocoa powder, baking soda, salt, and granulated sugar. This ensures the dry ingredients are well combined before adding the wet ingredients.
- Pour the warm chocolate mixture into the dry ingredients. Stir gently until the mixture is just combined. Be careful not to overmix, as this can affect the cake’s texture.
- In a separate bowl, whisk together the buttermilk, vegetable oil, and eggs. Once well mixed, add this wet mixture to the cake batter and stir gently until everything is just combined.
- Pour the cake batter into the prepared pan and tap it lightly on the counter to release any air bubbles. Bake the cake in the preheated oven for 40-45 minutes, or until a skewer inserted into the centre comes out clean. Start checking at the 40-minute mark to avoid overbaking.
- Allow the cake to cool in the pan for about 10 minutes.
- Prepare the Truffle Mixture In a saucepan over medium heat, combine the heavy cream, liquid glucose (or light corn syrup), and butter. Stir occasionally and bring the mixture to a simmer.
- Once the mixture has come to a simmer, remove the saucepan from the heat. Pour the hot cream mixture over the finely chopped dark chocolate in a heatproof bowl. Let it sit for 1 minute to allow the chocolate to melt, then whisk the mixture until it becomes smooth and glossy.
- Divide the truffle mixture into two equal portions. Cover one portion and refrigerate it for about 2 hours, until it thickens to a spreadable consistency. Leave the other portion at room temperature for the final glaze.
- Once the cake has cooled completely, carefully slice it horizontally into three even layers using a long serrated knife. This will give you three layers to fill and stack.
- Spread half of the chilled truffle frosting evenly over the top of the first cake layer. Then, place the second cake layer on top and spread the remaining truffle frosting over it. Top with the final cake layer.
- Refrigerate the assembled cake for at least 2 hours to allow the frosting to set and firm up.
- Once the cake has chilled, pour the room-temperature truffle glaze over the top of the cake.
- Place the cake back into the refrigerator for at least 30 minutes to allow the glaze to set properly.
- Your chocolate mud cake is now ready to serve.
